Cheesy Ranch Potatoes and Smoked Sausage

  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine potatoes, smoked sausage, olive oil, ranch seasoning, salt, and pepper.
  3. Spread the mixture on a baking sheet.
  4. Bake for 25-30 minutes or until potatoes are tender.
  5. Remove from oven and stir in sour cream.
  6. Top with cheddar cheese and return to oven for 5 minutes, or until cheese is melted.
  7. Serve warm.
