  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can black beans (15 oz), drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Avocado, diced for garnish
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and bell pepper, sauté until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add diced tomatoes, chicken broth, shredded chicken, black beans, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot topped with tortilla strips, avocado, and cilantro.
