Crock Pot Calico Beans

A hearty and flavorful dish made with a mix of beans and meats cooked slowly in a crock pot.

  • 1 cup kidney beans, soaked overnight
  • 1 cup pinto beans, soaked overnight
  • 1 cup black beans, soaked overnight
  • 1 pound ground beef
  • 1 pound bacon, chopped
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups diced tomatoes
  • 1/2 cup barbecue sauce
  • 1/4 cup brown sugar
  • 2 tablespoons mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet until crispy. Remove and set aside.
  2. In the same skillet, brown the ground beef. Drain excess fat.
  3. Add onion and bell pepper to the skillet and cook until softened.
  4. In the crock pot, combine soaked beans, cooked bacon, ground beef mixture, diced tomatoes, barbecue sauce, brown sugar, mustard, garlic powder, chili powder, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or until beans are tender.

Notes

  • Soak beans overnight for best results.
  • Feel free to adjust spices to your taste.
  • Add more vegetables if desired.
