Crock Pot Taco Rice Soup

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup uncooked rice
  • 4 cups beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Drain excess fat and transfer beef to the crock pot.
  3. Add black beans, corn, diced tomatoes, rice, beef broth, and taco seasoning.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Before serving, stir in shredded cheese until melted.

Notes

  • Adjust spice level by adding jalapeños if desired.
  • Serve with tortilla chips or sour cream on top.
  • Store leftovers in the refrigerator for up to 3 days.
