- 2 lbs chicken thighs
- 1 bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Place chicken thighs in the crockpot.
- Add bell pepper, onion, and garlic on top of the chicken.
- Pour diced tomatoes and chicken broth over the mixture.
- Sprinkle oregano, basil, salt, and pepper.
- Cover and cook on low for 6-8 hours.
- Shred chicken before serving.
