Crockpot Chicken Cacciatore

A hearty and flavorful chicken dish cooked in a crockpot.

Ingredients

  • 2 lbs chicken thighs
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the crockpot.
  2. Add bell pepper, onion, and garlic on top of the chicken.
  3. Pour diced tomatoes and chicken broth over the mixture.
  4. Sprinkle oregano, basil, salt, and pepper.
  5. Cover and cook on low for 6-8 hours.
  6. Shred chicken before serving.

Notes

  • Serve with pasta or rice.
  • Can add mushrooms for extra flavor.
  • Store leftovers in the fridge for up to 3 days.
