Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 8 oz cream cheese
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • Chopped cilantro for garnish

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add black beans, corn, diced tomatoes, and taco seasoning.
  3. Pour in chicken broth and mix well.
  4. Cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, add cream cheese and stir until melted.
  6. Serve with shredded cheddar cheese and cilantro on top.

  • Adjust spice level by using mild or hot diced tomatoes.
