Crockpot Pepper Steak

Ingredients

  • 2 pounds of flank steak, sliced thin
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes (14.5 oz)
  • 1/4 cup of soy sauce
  • 1/4 cup of beef broth
  • 1 tablespoon of cornstarch
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Brown the flank steak on both sides.
  3. Transfer steak to the crockpot.
  4. Add bell peppers, onion, and garlic to the crockpot.
  5. Pour diced tomatoes, soy sauce, and beef broth over the mixture.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Mix cornstarch with a little water and stir into the crockpot 30 minutes before serving to thicken the sauce.
  8. Season with salt and pepper before serving.
