Crockpot Taco Casserole

A hearty and easy-to-make taco casserole cooked in a crockpot.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup tortilla chips, crushed

Instructions

  1. Brown the ground beef in a skillet.
  2. Add the taco seasoning and mix well.
  3. Transfer the beef to the crockpot.
  4. Add the black beans, corn, diced tomatoes, and mix.
  5. Cook on low for 6 hours.
  6. Top with cheese and crushed tortilla chips in the last 30 minutes of cooking.

Notes

  • Serve with sour cream and salsa if desired.
  • Can substitute ground turkey for a leaner option.
