Homemade Hungarian Goulash

  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 bell pepper, chopped
  • 4 medium potatoes, peeled and diced
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef and brown on all sides.
  3. Stir in onions and garlic, cooking until softened.
  4. Add paprika and caraway seeds, stirring well.
  5. Add bell pepper, potatoes, and beef broth.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  7. Season with salt and pepper to taste.
