  • 2 lbs chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 bell peppers, sliced
  • 2 carrots, sliced
  • 2 cups chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • 2 sprigs thyme
  • 1 Scotch bonnet pepper, whole

Instructions

  1. Season chicken with salt, pepper, garlic, and ginger. Let it marinate for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Brown the chicken pieces on all sides.
  3. Remove chicken and set aside. In the same pot, add onion, bell peppers, and carrots. Sauté until softened.
  4. Add chicken back to the pot along with chicken broth, soy sauce, brown sugar, thyme, and Scotch bonnet pepper.
  5. Bring to a boil, then reduce heat. Cover and simmer for 45 minutes.
  6. Adjust seasoning as needed. Serve with rice or bread.
