- 2 lbs chicken, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 bell peppers, sliced
- 2 carrots, sliced
- 2 cups chicken broth
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 2 sprigs thyme
- 1 Scotch bonnet pepper, whole
- Season chicken with salt, pepper, garlic, and ginger. Let it marinate for at least 30 minutes.
- Heat oil in a large pot over medium heat. Brown the chicken pieces on all sides.
- Remove chicken and set aside. In the same pot, add onion, bell peppers, and carrots. Sauté until softened.
- Add chicken back to the pot along with chicken broth, soy sauce, brown sugar, thyme, and Scotch bonnet pepper.
- Bring to a boil, then reduce heat. Cover and simmer for 45 minutes.
- Adjust seasoning as needed. Serve with rice or bread.
