Ingredients

  • 4 large tortillas
  • 1 cup hummus
  • 1 cup spinach leaves
  • 1 cup roasted red peppers, sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup black olives, sliced
  • 1/2 cup sun-dried tomatoes, chopped

Instructions

  1. Spread hummus evenly over each tortilla.
  2. Add spinach leaves on top of the hummus.
  3. Layer roasted red peppers, feta cheese, black olives, and sun-dried tomatoes on each tortilla.
  4. Tightly roll each tortilla from one end to the other.
  5. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Slice into pinwheels and serve.
