Slow Cooker Beef Bourguignon

A hearty and flavorful beef stew made in a slow cooker.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound mushrooms, halved
  • 2 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the beef chuck on all sides.
  3. Add onions, carrots, and garlic to the slow cooker.
  4. Add the browned beef and bacon to the slow cooker.
  5. Pour in red wine and beef broth.
  6. Stir in tomato paste, thyme, and bay leaf.
  7. Cover and cook on low for 8 hours.
  8. In the last hour, add mushrooms.

Notes

  • Serve with crusty bread.
  • Can be stored in the refrigerator for up to 3 days.
