Slow Cooker Cajun Red Beans and Rice

A hearty dish made with red beans and rice, flavored with Cajun spices.

Ingredients

  • 1 pound of dried red beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • 4 cups chicken broth
  • 2 cups cooked rice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse and soak the red beans overnight.
  2. In the slow cooker, combine beans, onion, bell pepper, celery, garlic, Cajun seasoning, thyme, and chicken broth.
  3. Cook on low for 8 hours or until beans are tender.
  4. Stir in cooked rice.
  5. Season with salt and pepper to taste.
  6. Serve warm.

Notes

  • This dish can be made vegetarian by using vegetable broth.
  • Adjust the spice level by adding more or less Cajun seasoning.
  • Leftovers can be stored in the refrigerator for up to 3 days.
