Slow Cooker Chicken Jambalaya

A hearty slow cooker chicken jambalaya packed with flavors.

  • 1 pound chicken breast, diced
  • 1 cup long-grain rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sliced sausage (optional)
  • 1 cup frozen green peas

Instructions

  1. Place the chicken, rice, tomatoes, bell pepper, onion, garlic, chicken broth, Cajun seasoning, salt, and pepper in the slow cooker.
  2. Stir to combine all the ingredients well.
  3. If using, add the sliced sausage.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. In the last 30 minutes of cooking, add the frozen peas.
  6. Stir before serving and enjoy your jambalaya.
