Slow Cooker Chicken Stew

A hearty slow cooker chicken stew perfect for any day.

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add chopped vegetables on top.
  3. Pour chicken broth over the ingredients.
  4. Add thyme, rosemary, salt, and pepper.
  5. Cover and cook on low for 6-8 hours.
  6. Shred the chicken before serving.

Notes

  • Serve with crusty bread.
  • Leftovers can be stored in the fridge for up to 3 days.
  • For a thicker stew, add a cornstarch slurry before serving.
