  • 2 lbs chicken breasts
  • 6 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 cup green onions, chopped

Instructions

  1. Place chicken, potatoes, onion, garlic, broth, salt, pepper, and thyme in the slow cooker.
  2. Cook on low for 6-8 hours or until chicken is cooked through.
  3. Remove chicken and shred it; return to the slow cooker.
  4. Add cream cheese and stir until melted and well combined.
  5. Stir in cheddar cheese and cooked bacon.
  6. Garnish with green onions before serving.
