Slow Cooker Marie Callender’s Potato Cheese Soup

  • 1 cup chopped onion
  • 1 cup shredded carrots
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Place the diced potatoes, chopped onion, shredded carrots, and minced garlic in the slow cooker.
  2. Add the chicken broth, salt, pepper, and thyme.
  3. Cover and cook on low for 6-8 hours or high for 4 hours until the vegetables are tender.
  4. Stir in the heavy cream and shredded cheddar cheese.
  5. Cook for an additional 30 minutes until the cheese is melted and the soup is hot.
  6. Serve warm.
