Smoked Mac Cheeseburger Stuffed Pepper Bombs

A delicious fusion of smoked mac and cheese and cheeseburger flavors, all stuffed in a pepper.

Ingredients

  • 4 large bell peppers
  • 2 cups macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup cooked ground beef
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your smoker to 225°F.
  2. Cook the macaroni according to package instructions and drain.
  3. In a bowl, mix macaroni, cheddar cheese, ground beef, onions, tomatoes, garlic powder, smoked paprika, salt, and pepper.
  4. Cut the tops off the bell peppers and remove seeds.
  5. Stuff each pepper with the macaroni mixture.
  6. Place stuffed peppers in the smoker for 1 hour.
  7. Remove and let cool for a few minutes before serving.
